We finished tapping March 6, just in time to catch the first run of sap (well, except for that crazy early one in February) the next day. After letting the lines clean out for a day or so, we then collected some sap, and fired up our new reverse osmosis for the first time this morning. It worked beautifully, raising the Brix of the sap from 2 to 8. Then in the afternoon, we lit our first fire in the evaporator, and by the end of the afternoon had our first few gallons of sap. It’s good to get back at it!
First day of boiling!
